Ham & Eggs

From Michel Roux’s Eggs. It’s not so much a recipe but an inspiration. Served here with baked polenta and mixed green salad for a Sunday brunch.

Ham & Eggs

Ingredients:
Olive oil
2 eggs
2 slices of ham
Salt & Pepper


Directions:
Heat the olive oil in a pan and put in the ham. Turn the slices over after 1 minute, just enough to warm them through. Add the eggs and cook gently until done (cover the pan if necessary).

Plate the ham and egg and season with salt and pepper.
