Chocolate Brownie Cookies

I was long due to settle the cookie debate in NYT brought to my attention. I am not keen on using NYT’s recipe because I do not want to stock up on the flours so I chose Chubby Hubby’s chocolate laden recipe without realizing that it is not strictly cookies but brownie cookies. I was suspicious of the 35g flour but for some reason just went and made it.

But I didn’t regret it one bit! It was amazing. Even my husband who doesn’t like sweet things couldn’t stop munching on it. The cookie takes on an interesting crispy outer layer which yields to melting , chewy sponginess of brownies. There is no further need to discuss the chocolaty flavour. Lindt never fails me.

S, CH’s wife, made the cookies to sandwich banana ice cream. I can just imagine how perfect such texture to accompany ice cream.

Meanwhile…. the quest for chocolate chip cookies goes on.

Ingredients:
35g all-purpose flour
1/4 tsp baking powder
1/8 tsp salt
2 large eggs
135g sugar
1/2 tbsp brewed espresso
1 tsp vanilla extract
30g unsalted butter
140g 75% cacao chocolate, chopped

Directions:
Preheat the oven to 375ºF/190ºC. Line 2 baking sheets with parchment paper. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

In the bowl of an electric mixer, briefly whip the eggs to break them up. Add the sugar, espresso, and vanilla and beat on high for 15 minutes, until thick.

While the eggs are whipping, melt the butter and chocolate and stir them until smooth. Gently fold the chocolate mixture into the egg mixture until partially combined (there should still be some streaks). Add the flour mixture to the batter and carefully fold it in. If the batter is very runny, let it rest until it thickens slightly, about 5 minutes. Drop the batter by heaping teaspoonfuls onto the prepared baking sheets and bake until puffed and cracked, 8 to 9 minutes. Cool on a wire rack before removing from the sheets.

  3. Hi! Those ones look fabulous! I would like to make them in the weekend but have one small doubt - is it 1 tsp baking powder or 1/4? Also i cant see clearly amount of espresso - is it 1/2 tbsp? Thanks :)

    V: Hi Aga. Sorry for that, I wasn’t paying attention to the formatting. It’s 1/4 tsp baking powder and 1/2 tbsp brewed espresso. I hope you like it!

  4. these look yummy…I’m in pumpkin land right now but as soon as Thanksgiving weekend is over I plan to curl up on the couch with one of these! Thanks for reminding me of Claudia Fleming’s book - it was my bible when I first started pastries and since then has been collecting dust. It’s fun to rediscover a really good cookbook.

  6. I am amazed that the recipe only requires 35g flour. Another recipe to experiment. I need to lose some weight and give them out as gifts, haha!

    V: Yes! It’s more brownies in the form of cookies than cookies in the ‘normal’ sense. Hahaha! Do send them out. I’m sure the recipients will remember you fondly :D .
