Tomatoes, Corn, and Shrimp Salad

Tomato, Corn, and Shrimp Salad

Corn and Shrimp are my favourite food items. So when I read this recipe at Bitten, I just had to make it.

Ingredients:
3 Tomatoes, cut into 8 sections
2 ears of Corn, shucked and kernels removed.
1 clove garlic, finely sliced
6-10 Shrimp, cooked
Salt and pepper to taste
A handful of chopped parsley
Oil for frying

Directions:
Put the tomatoes section in the salad bowl and sprinkle with a little salt. Set aside. (A trick I learn from, if I remember correctly, Thomas Keller’s French Laundry which results in a more flavourful tomatoes).

Heat the oil and gently fry the garlic. Add the corn kernels and fry until fragrant and cooked. Season with a little salt.

Meanwhile, pour the excess juice from the tomatoes. Add the cooked shrimp and corn. Mix in the chopped parsley and correct the seasoning.
