Stewed Corn, Tomatoes, Ground Beef

 

Before going away on trips, I normally prepare this dish to keep in the fridge so that, tired from our travel, we have something easy and satisfying (and Indonesian, of course) to sate our craving for rice. 

Ingredients:
2 cups of corn
250 g of ground beef
3 tomatoes, sliced
3 shallots, finely sliced
1 clove of garlic, finely chopped
3 pieces of chilies, finely sliced
salt, pepper, and sweet soy sauce to taste
oil for sauteing

Directions:
Heat the oil in a pan. Add the chilies, shallots and garlic and fry gently until fragrant and translucent. Add the ground beef and cook for a few minutes until barely done. Add in the sliced tomatoes and continue stirring until soft. Finally, add the corn and mix well. Season with salt, pepper, and sweet-soy sauce. It should be sweet, sour, and savoury. Let the mixture simmer for about 15 minutes in low heat until the flavours meld and get absorbed by the corn and beef.

Best eaten after a few days with heaps of steamed rice.
